Brick Head Mushroom Pizza

Hypholoma lateritium, the Brick Head mushroom, is a genuinely unusual pizza topping. While popular in North America and Japan, Europeans consider it too bitter and barely edible.
A truly horrible Pizza? Try the recipe and judge for yourself!

  1. Purchase a medium-sized (12-inch) frozen Margarita pizza.
  2. Scrape off the cheese
  3. Clean the brick heads, cut off and discard the stringy stems.
  4. Cut the heads into cuboids (rectangular prisms)
  5. Use a toothpick to punch the iconic holes.
  6. Sprinkle the bricks and scraped off cheese on the pizza.
  7. Bake according to the package directions.

    The Brick Head (a.k.a. Brick Cap) is edible, but raw as a pizza topping, it would become dry, tough, and remain bitter.
    Look for Brick Cap mushroom recipes: Sauté them with oil, butter, garlic, and herbs like thyme, then season with salt and pepper.
