
Hypholoma lateritium, the Brick Head mushroom, is a genuinely unusual pizza topping. While popular in North America and Japan, Europeans consider it too bitter and barely edible.

- Purchase a medium-sized (12-inch) frozen Margarita pizza.
- Scrape off the cheese
- Clean the brick heads, cut off and discard the stringy stems.
- Cut the heads into cuboids (rectangular prisms)
- Use a toothpick to punch the iconic holes.
- Sprinkle the bricks and scraped off cheese on the pizza.
- Bake according to the package directions.

The Brick Head (a.k.a. Brick Cap) is edible, but raw as a pizza topping, it would become dry, tough, and remain bitter.
Look for Brick Cap mushroom recipes: Sauté them with oil, butter, garlic, and herbs like thyme, then season with salt and pepper.
